Razzle Dazzle Very Berry Pie

If you want a mixed berry pie, then this one is for you. This is a simple, no problem delicious berry pie that can be made from frozen berries. Fresh berries work too if they are in season.
Makes approximately 8 mini pies.
  • 2 cups blackberries (fresh or thawed frozen)
  • 1 cup raspberries (fresh or thawed frozen)
  • 1/2 teaspoon lemon zest
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons tapioca flour
  • 1/2 cup granulated sugar
  • 3 tablespoons light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 all-butter pie double crust recipe (8 mini pies)
  1. Using a large bowl, mix together the blackberries, raspberries lemon zest and juice.
  2. Using another bowl mixed the dry ingredients: cornstarch, tapioca, sugar, brown sugar, cinnamon and salt.fresh-raspberries
  3. Pour the dry ingredients into the berries and tossed gently.
  4. Cut 8 tops and bottom circles from the pie crust dough.
  5. Place each dough circle into pie maker.
  6. Spoon the filling into each mini pie shell but not to the very top to prevent boiling over.
  7. Close the lid and bake for 8-12 minutes.
  8. Remove pies with a spatula and allow to cool.
