Pear and Lime Mini Pie Recipe
Here is a delightful pie with a switch. Pear and lime make a nice citrus dessert.
Makes approximately four mini pies.
  • 3 medium pears (Bartlett or de-Anjous)
  • 3 tablespoons granulated sugar
  • 2 tablespoons fresh lime
  • 1 tablespoon tapioca flour
  • 1 tablespoon water
  • 1 teaspoon lime zest
  • 1 teaspoon unsalted butter
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 all-butter pie single crust recipe (4 mini pies)
  1. Cut 4 tops and bottom circles from the pie crust dough.
  2. Refrigerate for at least 15 minutes.
  3. Peel, core and dice the pears into small pieces.
  4. Over low heat, add all the ingredients except the tapioca flour and water into a small pan.
  5. Cook until fruit is just starting to soften.
  6. Blend the tapioca and water. Add it to the hot pear mixture.
  7. Stir until it thickens and remove from heat.
  8. Let this cool some, about 15 minutes or so.
  9. Prepare the mini pie maker.
  10. Place each dough circle for the bottom into the pie maker.
  11. Spoon the filling into each mini pie shell but not to the very top to prevent boiling over.
  12. Top each pie with you dough circles.
  13. Close the lid and bake for 8-12 minutes.
  14. Remove pies with a spatula and allow to cool.
